Share 'Help! Jim brought home ground chicken and I don't know what to do with it!'

I'm not a fan of the ground meats. Unless they are encased. I like big honking cuts of meat with skin and bone still on and in them. Even though I'm in the meat processing and packing industry, I couldn't tell you what ground chicken is or what to do with it. I make a mean meatloaf and stuffed peppers, but wouldn't the chicken just dry out and crumble? Any suggestions?
