Ever since I watched the episode on yogurt making, I've been making my own. It's so much better than the junk in the stores, but every time I make it, I get a layer that settles to the bottom. I was wondering if anyone else has had this happen. It's a darker, thicker layer that isn't very good to eat. Any ideas about why this happens and what I can do to avoid it.

I suspect it might have something to do with the powdered milk. I have played around with the amount I've added without any change. I'd rather not eliminate it altogether, because I like the taste it gives to the yogurt, and I can use the extra protein.
