Help! Jim brought home ground chicken and I don't know what to do with it!

I'm not a fan of the ground meats. Unless they are encased. I like big honking cuts of meat with skin and bone still on and in them. Even though I'm in the meat processing and packing industry, I couldn't tell you what ground chicken is or what to do with it.

I make a mean meatloaf and stuffed peppers, but wouldn't the chicken just dry out and crumble?

Any suggestions?

We had ground chicken this past week - my wife used it instead of the ground beef or turkey that she usually uses in chili. It was quite good, actually. Tasted a little different than the usual chili, but it was good.

We've had chicken burgers before too - pretty good, but again it isn't beef. I found a recipe here that looked pretty good - I haven't tried it yet, but it is on my list.

Also, it'll depend on the fat content in the ground chicken - it can vary, just like beef, based on what's in it.

Chicken tacos are good too....

Now you've got me thinking about dinner! :-)

We made a quick chili with white beans. It was good, but still not beef. Give me a regular old chicken any day over ground chicken.

I buy ground chicken weekly and use ground beef less and less. Yes, it is leaner. It makes an amazing meatloaf. If you follow the regular recipes it will not be dry---eggs and bread crumbs do the same for it as they do for beef. Our family loves to take a bit of many meats and make meatloaf (chicken, pork and venison) I also use ground chicken for spaghetti! The finished product is very different -lighter. My big secret ingredient for chicken spaghettis sauce, is the balsamic vinegar that I add while simmering. If you like it-add about 1/4 cup. If you are not familiar with it, start with half that. Another great way to use ground chicken in the summer is for chicken hamburgers. Again, you will want to mix the meat like meatloaf so they stay together and not dry out. A fun way to make chicken burgers is to add things to the meat first like a theme: taco burgers would have taco items in the meat and taco fixings on top! This could go on forever as far as themes go, but have fun.

We used ground chicken the other day to make chicken burgers, and they were great. Chicken, rolled oats, soya sauce, pepper, and chicken spice. We all enjoyed them quite a lot. Made tiny ones for the kids and they ate them all up.

use the ground chicken for chicken, spinach and goat cheese dumplings. dumplings are easy and fun to make. all you need is flour, water, egg, baking powder and a rolling pin.
